Bocuse d'Or
Bocuse d’Or is the unofficial world championship of chefs. Held in Lyon every two years, each participating country is represented by a duo who prepares and presents a lavish, sophisticated menu built around a set of given ingredients.
In 2026–27, Denmark is represented by Christian Wellendorf and his commis Gustav Spurré. Knowing they need something exceptional to stand out in this increasingly fierce competition, Wellendorf engaged PONDER as strategy and design partner to develop a conceptual framework and a tight design system for his gastronomic vision.
The result is a concept called The Clockwork.
For Christian Wellendorf cooking is not an art form. It’s a craft. He is not susceptible to divine inspiration and sudden impulses; he works with discipline, approaching the kitchen like a clockmaker approaches a timepiece – with punctuality, patience, and mechanical accuracy.
He sees time as the magical refiner of gastronomy. Coming from a cold country with long winters and restricted access to fresh produce, time has become a key ingredient in Danish cuisine. We use it to cure, dry, ferment, brine, and reduce. Time not only preserves. It enhances flavour and develops the complexity of the raw materials. Time is also our most refined cooking technique. Time must be controlled. A single second can make all the difference. The same goes for years behind the stove.
The Clockwork is an homage to craftsmanship, to patient work, to time as the secret ingredient of the Nordics, and to the idea that it’s worth taking your time if you want to reach the sublime.
To accompany this concept, we created an elegant visual identity for Wellendorf’s team, rooted in a calm and mechanical expression that combines the idea of the Clockwork with the decorative aesthetic tradition of the Bocuse d’Or.
The logo is designed like a clock dial in order to visualise the central theme of time and precision. Its rotation imitates the movements of a clockwork and how a kitchen functions like a system where every part of the fine machinery fits together. The deep blue color was picked to create an elegant style associated with metal and the cold Nordic waters. The fact that the clockwork has seven gears alludes to the seven courses prepared for the competition.

This design was implemented on Wellendorfs menu and in a short video presentation of the Danish team. Elements of the concept have even been incorporated into the dishes themselves, creating a tight conceptual framework for his work.
We hope it will help him bring home the gold medal in 2027.
